FERNA EGG ALBUMEN (WHITE) POWDER

Pasteurized, spray- dried (hen) egg powder, used as gelling and whipping agent.

Compared to fresh eggs, FERNA EGG ALBUMEN POWDER has a longer shelf life and premix advantage.

Easier to store and transport.

No refrigeration needed.

Proven to be more economical for use in bakery products and desserts that require high foam stability like meringue, cupcakes, marshmallows and icings. 

Recommended reconstitution is 1 kg powder:7 liters of water (which gives the equivalence of egg whites of  235 medium-sized eggs)

1 pc. fresh egg is equal to: 4.25g egg albumen powder + 30.0g water

Shelf life: 3 years from date of manufacture
